Lemon Butter Poached Shrimp and Cracked Black Pepper

A recipe by Relish Caterers’ very own Executive Chef Raymond Z. Mohan. Recipe for 6 people.

Step 1 gather ingredients

1 lb. of 16/20 shrimp (16 to 20 shrimp per pound) Peel and Devein (tail on)

4 cups white wine

4 cups water

2 lemon zest

2 lemon juice

1 lb. unsalted butter (cut in to small cubes)

1 Tablespoon Cracked Black Pepper

Salt

.2 oz. cilantro sprouts or cilantro leaf (about 20 leaf or sprouts 1 per shrimp)

Step 2

4 to 5 quarts pot

Place the white wine and reduce by half

Add the water bring to a simmer and Wisk in the butter add

Lemon zest and lemon juice

Season with salt

Keep the poaching liquid at a simmer and drop the shrimp cook for 1 ½ minutes or until till done to your liking

Step 3 Plating

Remove the shrimp place in a mixing bowl add the crack black pepper and cilantro

Toss together and place each one serving platter (make sure each one has black pepper and cilantro leaf)
